Tasty Tuesday Plant Based Preparations Week 1: Sweet Potatoes

Sweet potatoes are the #1 most consumed food among people in the blue zones.  Combine that with the fact that my son adores them and you will always find them ready to go in my fridge.

-Set oven to 400 degrees.

-Rinse a few sweet potatoes and pierce each a few times with a fork.

-Place on cookie sheet lined with parchment paper and bake for 60 – 75 min (depending on size of potato and strength of your oven)

-Get ready for work, go on a walk, clean the house….sweet potatoes are what I call a throw and go food, no maintenance required!  Sometimes I even turn off the oven and leave them in there for a while, they actually get sweeter the longer they sit.

-Store them in a sealed container in the fridge and they are ready for eating as is, dicing into salads, adding to recipes, pureeing..the options are endless!

Sweet potatoes, they are not just for Thanksgiving anymore…..
